Moms Greek Salad

Greek Salad
Dressing:
¼ cup olive oil (cold pressed is best)
4 tsp lemon juice (fresh is always better)
1 ½ tsp dried leaf oregano
Salt and freshly ground pepper to taste

Ingredients:
3 large ripe tomatoes, chopped
2 cucumbers, peeled, and chopped
1 small red onion or 2 green onions chipped
Feta cheese
Black olives

Three Bean Salad

This is a momma B classic and I am sure it has been a classic in many homes. This three-bean salad is so good! I never thought I would like beans out of a can but this just works!

It is good when it comes right out of the fridge, and for a good light lunch.



Ingredients
  • 1 can corn, drained
  • 1 can green beans, drained
  • 1 can yellow waxed beans, drained
  • 1 can red kidney beans, drained and rinsed
  • 1/2 small red onion, chopped
  • 1/4 cup vegetable oil
  • 1/4 cup vinegar
  • 1/4 cup sugar
Directions

Combine the corn, green beans, waxed beans, kidney beans and onions in a large bowl. 
In a small bowl combine the oil, vinegar and sugar and mix well.
Poor the dressing mixture into the bean salad bowl and mx well.
Refrigerate for at least 3 hours before serving.

Momma B's Herbed Cheese Bread


I would have to say my love for cooking has always been there, I just never knew it. One of my most favorite things growing up was coming home from school and smelling something baking in the oven. I think my love for food started when I realized how good my mom's food really was. She always put so much time into preparing our meals and they were always great. 
This cheesy bread recipe is great but I would have to say it must be paired with a soup and lots of butter--I love butter.


Ingredients

  • 1 cup white flour
  • 1 cup whole wheat flour
  • 1 cup shredded cheddar cheese
  • 1 tbsp sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp basil           
  • ½ tsp sage
  • ¼ tsp thyme
  • ¼ cup cold butter
  • egg
  • ½ cup plain yogurt
  • ½ cup milk
Directions
Preheat oven a 400F

Mix the white flour, wheat flour, shredded cheese, sugar, baking powder, baking soda, salt, basil, sage and thyme together.

Add cold butter to mixture with a pastry cutter.

In a separate bowl mix together the egg, yogurt and milk.

Add the dry ingredients to the milk mixture gradually.  

Bake at 400F for about 25 min in greased pan.

Broccoli Bacon Slaw [Momma B Original]

I just LOVE this salad!!!

Lets face it, anything with bacon is a winner.

It is PERFECT for potlucks because then everyone will love you for making it!

Do yourself and everyone else a favor tho, and double the recipe if you are bringing it to share.

Ingredients for the slaw:

  • 1 package of broccoli slaw mix
  • 2 cups slightly cooked broccoli florets
  • 1/2 cups craisins (or raisins)
  • 1/4 cup - 1/2 cup bacon bits (real bacon crumbles make it even better)
  • 1/2 cup red onion
  • 1/2 cup roasted sunflower seeds OR roasted slivered almonds
Ingredients for dressing:
  • 1/2 cup mayonnaise
  • 1/4 cup brown sugar
  • 1/2 Tbs vinegar (or 1.5 tsp)
Directions are simple: mix up the slaw ingredients. Mix up the dressing ingredients. Combine and LOVE IT!

Chicken Divan

This is a Momma B original and it is just fantastic!! It is so quick and easy. 


Ingredients
  Serves 4-6
  • 2 cups cooked chicken cut in pieces
  • 3 – 4 cups blanched broccoli
  • 2 cans cream of chicken soup
  • ½ cup milk
  • ¼ cup mayonnaise
  • Squeeze of lemon
  • 1 Tbsp cumin
  • ½ Tbsp curry
  • Salt and pepper to taste 
  • Cheddar cheese, grated (optional)
  • French fried onions (optional)
  • Coconut (optional)
Directions
1. Preheat oven to 350°F
2. In a greased baking dish, put the cooked chicken and blanched broccoli at the bottom
3. Mix the following seven ingredients together and pour over the broccoli/chicken
4. Top with cheddar cheese or french fried onions
5. Bake in oven until it bubbles- about 20 min
6. Serve over rice and add a little coconut if desired

Tuna Ball

Wow! It seems like forever since I have posted something on here. Probably because it has been. My hubby and I have made it across the country to Maryland where we will spend the summer. Because of traveling and unpacking and getting settled in, it has been so hard to post a recipe--not to mention we don't have the internet yet so it is kind of difficult to post. Here is a quick and easy tuna ball recipe. It's great! Mama B makes it all the time when guests come over.


Ingredients
1 (8 oz.) package of cream cheese
1 can of tuna, drained
1 bunch of green onions, sliced
2-3 drops of tabasco sauce
1 t. Worcestershire Sauce

Mix all the items together and refrigerate for a few hours before serving. Serve with your favorite cracker.

Spinach Cheese Bites

These are so stinkin' good! This is a mama B original and she used to make them all the time when we had company over. They are so quick and so easy to make.


Ingredients

  • 6 oz. swiss or havarti cheese, grated
  • 1/2 to 1 tsp. garlic powder
  • 1/2 package of fresh spinach, chopped finely
  • 2/3 cup mayonaise
  • 8 English Muffins (plain or cheese)
Directions
1. Mix all ingredients together in a bowl to form a thick paste.
2. Slice the muffins in half. Spread the paste mixture onto each muffin slice.
3. Bake 10-12 min at 350 degrees F
4. Cut each slice into quarters.

Note: If you wash the spinach leaves, make sure they are completely dry before chopping them. Also, This can be prepared early in the day to be baked later that night.

7 Layered Salad


How was your weekend?! Our was great, especially since my brother, his wife, and our brand-new 1 month old nephew is visiting Canada for the first time. He is just perfect in every way.

So food. Again, this is one of my all-time favorites.  My mom made this growing up, usually for potlucks, or when we had people over for dinner. I could never get enough, and I still cant! It's fresh, and DELICIOUS! But, in the words of my cousin Kenzie, "bacon makes everything taste better."


Ingredients:
  • Shredded Iceberg lettuce (about half a head)
  • 1/2 cup celery, chopped
  • 1/2 cup green onions, chopped (3-4 of them)
  • 1 green pepper, diced
  • 1-2 cups of frozen peas (enough to cover the other ingredients)
  • 1 1/2 cups cheddar cheese, grated
  • 8 slices of bacon, cooked and crumbled
  • 1/2 cup sour cream AND 1 cup mayo mixed up

Layer these ingredients in this order in a large bowl, as evenly as possible. Then spread the creamy mayonnaise mixture on top to seal all the ingredients. Cover with plastic wrap, and refrigerate overnight, or as long as possible. When you serve it, dig deep so you can get all the layers (although the topping is the best).

Mediterranean tuna salad

This is a Momma B original, so you know it'll be good. I've been eating this for lunch for years! And every-time I love it even more. My husband, who is not a fish lover, loves having this for lunch. The red wine vinegar masks a lot of the fishy flavor that tuna usually has. This is one of my favorite keeper recipes.

  • 1/4 cup light mayonnaise
  • 1/2 tsp dried oregano
  • 1 Tbs red wine vinegar
  • 2-9 ounce cans of tuna, drained
  • 2 Tbs chopped black olives
  • 2 Tbs finely chopped red bell pepper
  • 2 Tbs sliced green onions
  1. Mix up the mayo, oregano, and vinegar
  2. Add the drained tuna, olives, red peppers, and green onions. Mix well.
Serve this on a toasted bagel, or just whole wheat bread, with cheese if you'd like. I also add a slice of tomato on there, do what you want, and I want this right now!!

Poor Man's Pudding

It was my mom and oldest brother's birthday last week. My brother is the only one of my siblings that lives near me, so we have him over lots...our kids LOVE him. We had him over last night to celebrate his birthday. He is not a huge dessert person, but my mom told me that he loved this dessert growing up. So whether he still loves it or not, this is what I've made for his birthday for the past 2 years.

When it came out of the oven, it looked like a regular cake. A few minute later, it looked like the cake sank in the cake pan, with the syrup sauce overcoming it. tastes amazing!


If you have one, a bunt pan is the best for this one.


Preheat oven to  375 degrees.


Cake:

  • 1/2 cup butter
  • 1/2 cup sugar
  • 2 eggs
  • 1 1/2 cups flour
  • 2 1/2 tsp baking powder
  • pinch of salt
  • 1 tsp vanilla
  • 3/4 cup milk
  1. mix the dry and the wet ingredients separately. When combining them together, add a little dry, then a little wet, and then mix in between each addition. Keep doing that until it's all combined and end with the dry ingredients. Set aside.
Syrup Sauce:
  • 1 1/2 cups water
  • 1/2 cup maple syrup (again, the real stuff is 100 times better if you have it)
  • 2 cups brown sugar
  • 1 Tbs flour
  1. In a sauce pan over medium heat, mix the brown sugar and the flour first.
  2. Combine it quickly with the rest, and heat just enough for the brown sugar granules to melt.

NOW to baking:
  1. Pour the syrup sauce in the bottom of your bunt pan (if you don't have one, just use a 9x13 dish).
  2. Pour the batter onto the syrup sauce. Now this can be tricky. I just add clumps of cake batter next to each other until the whole pan is covered with batter. You shouldn't really see the syrup anymore.
  3. Pop it in the oven for 30-40 minutes, until the top is lightly browned (use a toothpick to make sure the cake part comes out clean).
  4. Spoon into a bowl, top with syrup sauce left from the bottom of the bunt pan.


Tip: a ball of vanilla ice cream plopped on top.--you HAVE to, it just completes this dessert.
