Pepperoni Cheese String Roll Ups

Can you guys believe it's already August?? I can't!! This summer has just flown by!!

This is a very quick and easy snack for kids or adults who wish they were still kids. Lately I have been eating pepperoni like it's my job. It's so fun to just pop those slices right into your mouth.

I made these before but I never thought to put a butter glaze on top. Man am I glad I did. Now I don't recommend this as a normal snack for kids but I'm sure they will be thrilled when you surprise them with this!


Ingredients

  • 1 (8 ounce) package refrigerated crescent roll dough
  • 4 cheese sticks, halved
  • 1 (3.5 ounce) package sliced pepperoni
  • marinara or ranch sauce for dipping (optional)

Garlic Butter Glaze:

  • 2 tablespoons butter, melted
  • 1/2 teaspoon Italian seasonings
  • 1/4 teaspoon garlic powder
  • 1 Tablespoon grated Parmesan cheese


Directions
Preheat oven to 350 degrees. 

Take each triangle of crencent roll dough and place about 6 pepperoni on the bottom of the triangle. Place half of a cheese stick on top and roll up. Place seam side down on a cookie sheet and bake for 10-14 minutes or until golden brown.

While rolls are cooking, combine the melted butter, Italian seasonings, garlic powder and Parmesan cheese in a small bowl. 

When rolls are done remove from the oven and brush with the garlic butter glaze. Serve with marinara or ranch for dipping.

CPK's BBQ Chicken Pizza


So in high school I worked at California Pizza Kitchen. I was a hostess but in my opinion that was the best job to have there. For some reason hostesses were the only ones allowed to have a free meal after a shift. Man, that was the best job ever...seriously. Anyways, the BBQ Chicken pizza was something I got on a regular basis. I also got the BBQ Chicken chopped salad all the time too. We have the recipe for that here. This is by far the best pizza I have ever made


Ingredients
  • 1 whole Recipe For Pizza Crust (mine Makes Two Crusts)
  • 2 whole Boneless, Skinless Chicken Breasts
  • 1 cups Barbecue Sauce
  • 16 ounces, weight Fresh Mozzarella Cheese, Sliced Thinly
  • ½ whole Red Onion, Cut In Half And Sliced Very Thin
  • Chopped Cilantro, to taste
  • Olive Oil
  • Salt 


Directions
Preheat oven to 375 degrees.
Salt chicken breasts on both sides, then place in an ovenproof dish. Pour BBQ sauce over the breasts and turn them over to coat. Bake for 20 to 25 minutes, or until chicken is done. Remove from oven and cut into a fine dice. Set aside.
Increase oven temperature to 500 degrees.
Roll/stretch out one pizza crust. Lay it on a sheet pan drizzled with olive oil. Drizzle a little olive oil on the crust, then sprinkle on a little salt.
Spoon a couple of tablespoons of extra BBQ sauce on the crust and spread it evenly. Top sauce with half the sliced mozzarella. Sprinkle on half the diced chicken and thinly sliced red onion.
Sprinkle again with a little salt, then bake for 15 to 17 minutes, or until crust is golden brown and toppings are bubbly.
Remove from the oven and sprinkle on plenty of chopped cilantro. Cut into squares and serve immediately. Repeat with other crust and other ingredients, or save for another time.

Margherita Pizza

I hope everyone who celebrated memorial day enjoyed their day off!! I enjoyed sitting by the pool that just opened up at our apartment complex. Man, it is getting humid here!! Anyways, this is the best pizza recipe for the summer. It is so simple yet so delicious. 


Ingredients
adapted from Sweet Treats and More
makes one 12-inch pizza

  • 1 cup diced tomatoes
  • 1 tbsp Extra virgin olive oil
  • 1/4 tsp minced garlic
  • 1/8 tsp basil, oregano and parsleySalt and pepper
  • 1/2 cup fresh basil leaves, chopped or sliced thin
  • 2 to 2 1/2 cups shredded mozzarella cheese
  • 2 large tomatoes, sliced thin
  • 1 Store bought pizza dough  or  homemade pizza dough


Directions

Preheat oven to 500. 

1.  In a food processor, combine tomatoes, olive oil, garlic, salt and pepper to taste, and process until smooth. Sauté the mixture on the stove top for about 5 min.

2.  Roll out dough into a rectangular shape on lightly floured surface. 

3.  Place dough on a lightly greased cookie sheet with a touch of salt. Continue to roll and press out to edges (and up the sides if possible) of cookie sheet. 

4.  Cover dough evenly with pizza sauce mixture that was sauteed previously.  Top with mozzarella cheese, sliced tomatoes, and basil. 

5. Sprinkle with salt and pepper. 

6.  Bake on lowest oven rack in a 500 degree oven for 12 minutes or until crust is golden and cheese is bubbly.
