Curry Drumstricks

Blend the following in a food processor until as smooth as desired.

1= Tray Chicken Drumsticks (10-16 pcs)
4= Tbsp. Olive Oil
2= Onion
2= Tomato
1= small piece of Ginger
8= Garlic Cloves
3= Green Chili
1= Potato (secret ingredient)

Cook over stove stop over medium high for about 10 minutes. Then add the following spices:
2= Tsp Salt to taste
2= Tsp Turmeric Powder
2= Tsp Garam Masala
2= Cumin Seeds (Zerra)
1= Cup of water (gravy to taste)

Add the chicken drumsticks (remove skin and cut them 2 times to the bone to faster and tastier cooking)
Simmer until the chicken is done, about 20-25 minutes.

Add cilantro, and enjoy!!

Rockin Moroccan Stew

ROCKIN' MOROCCAN STEW
Ingredients:
2 tsp olive oil
1 cup chopped onions
1/2 cup each of diced celery and chopped green bell pepper (I only had orange for the dish pictured!)
1 clove garlic, minced
3 cups vegetable broth
3 cups peeled, cubed sweet potatoes
1 can (19oz) diced tomatoes, drained
1 can (19 oz) drained and rinsed chickpeas
1 tbsp lemon juice
2 tsp grated fresh ginger
1 tsp each of ground cumin, curry powder, ground coriander, and chili powder
1/2 tsp salt
1/4 tsp black pepper
1/4 cup raisins (I didn't have any so I used dried cranberries)
2 tbsp each light peanut butter, and chopped fresh cilantro
  • Heat olive oil in a large Dutch oven over medium high heat.  Add onions, celery, green pepper, and garlic.  Cook and stir until vegetables begin to soften (approx. 3 minutes)
  • Add all remaining ingredients, except raisins, peanut butter and cilantro.  Bring to a boil.  Reduce heat to low and simmer, covered, for 20 minutes.
  • Stir in raisins, peanut butter and cilantro.  Mix well.  Simmer for 5 more minutes.

I also added some leftover diced butternut squash with the sweet potato…so good!

5-Star Potato Salad

DIRECTIONS

  1. Boil peeled potatoes in salted water until done. Cool to room temperature.
  2. Place diced potatoes in large bowl.
  3. Mix mayonnaise, cider vinegar, sugar, mustard, salt, garlic powder, and pepper in another bowl.
  4. Add to potatoes.
  5. Add celery and onions and mix well.
  6. Stir in eggs.
  7. Sprinkle a little paprika on top.
