Best Pot Roast You'll Ever Eat

Man it's been awhile! The last few weeks have been hectic with my parents recent move to Canada. I helped them make the move up there which means Cathy and I were able to hangout a lot! It was great.

This pot roast is the classic Sunday dinner...except better! The flavors are so good and it makes the meat so moist and tender.

Ingredients
  • 1 large onion, sliced
  • 5-6 carrots, pealed and sliced
  • 2 1/2 pounds boneless pork loin roast
  • 1 cup hot water
  • 1/4 cup white sugar
  • 3 tablespoons red wine vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon ketchup
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder

Directions

1. Arrange onion and carrot slices evenly over the bottom of the slow cooker, and then place the roast on top of the onion. In a bowl, mix together water, sugar, vinegar, soy sauce, ketchup, black pepper, salt, garlic powder, and hot sauce; pour over roast.

2. Cover, and cook on Low for 6 to 8 hours, or on High for 3 to 4 hours.

3. Serve with mashed potatoes or add sliced potatoes in the pot roast before cooking begins.

Enjoy !!

Honey Garlic Chicken

Happy Friday everyone!! Danny and I officially leave for DC in 3 weeks, can't wait!! Well, here is a quick and easy crockpot recipe for you guys. My crockpot cooks a little faster then normal so I cooked the chicken on low for only 4 hours. The sauce is so so good!

Ingredients
source: adapted slightly from Croutons and Cupcakes

  • 3 cloves of garlic, crushed
  • ½ cup brown sugar
  • ¼ teaspoon salt
  • ¼ teaspoon dry mustard
  • 2 teaspoons soy sauce
  • ½ cup vinegar
  • ½ cup honey
  • ½ cup ketchup
  • 4 chicken legs-thighs or breasts

  • Directions

Place the chicken in the bottom of a 4-quart slow cooker. In a small bowl, whisk together the garlic, soy sauce, ketchup, vinegar, brown sugar, dry mustard, salt and honey. Pour over the chicken and cover.

Cook on low for 6 to 8 hours or high for 3 to 4 hours. Be sure to check the chicken periodically. My chicken was done after 5 hours on low. Remove chicken, place on a plate and tent with foil to keep warm. Transfer the remaining sauce to a saucepan and reduce down over medium heat until desired consistency is reached. I mixed a teaspoon of cornstarch with a tablespoon of water and added it to the sauce and continued to stir and cook on medium heat until it thickened up a bit.

Serve a little sauce over the chicken and garnish with fresh basil.

Serve chicken over rice with some broccoli or green beans on the side.

    Enjoy !!

I love chili. I love easy recipes. And I love crock-pots.

Speaking of crock-pots...one night as my husband and I were laying in bed he leaned over towards me, gave me a kiss and a hug and then said the following words...

"I love you my little crock-pot"

Now I do not know where he got this term of endearment from, but I thought it was halarious. Now whenever I use the crock-pot I think of my husband's oh so romantic words to me.
