Ingredients:
Serves 6-8
Time: less than 30 minutes!
- 1 (16 ounce or 454 grams) package penne pasta (or any other pasta)
- 2 tablespoons butter
- 2 tablespoons olive oil
- 2-4 skinless, boneless chicken breast halves - cut into thin strips or cubes
- 2 cloves garlic, minced
- salt and pepper to taste
- 3/4 cups half and half cream
- 1/2 cup chicken bouillon
- 1/2 cup pesto (recipe found here)
- 3 tablespoons grated parmesan cheese
Directions:
- Cook the pasta according to package directions (usually 8-10 minutes if it's penne)
- Melt butter and olive oil in a large pan over medium high heat. Add the chicken and garlic to the pan, and cook until almost cooked. Season with salt and pepper.
- Reduce the heat, and add cream, chicken bouillon, pesto, and parmesan cheese. Cook until the chicken is no longer pink.
- Add the cooked noodles, mix up, and serve with side vegetables (we did green beans this time, talk about a greeeen meal!)
