We will be posting recipes this week that include treats for valentine's day next week. I chose to do cupcakes because I love watching the cupcake shows in the Food Network. They look so good! I decided to give these cupcakes a try. I got my recipe from Martha Stewart and this is supposed to be a "healthy" cupcake...My husband is on a no sweets fast. I thought it would be justifiable if it was a healthy kind of cupcake. The recipe is below as well as the cream-cheese frosting.
Ingredients
- 3/4 cup all-purpose flour, (spooned and leveled)
- 3/4 cup sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 6 tablespoons unsweetened cocoa powder, preferably Dutch-process
- 3 tablespoons unsalted butter, melted
- 6 tablespoons buttermilk
- 1 large egg
- 1 large egg white
- Candy decorations (optional)
Directions
- Preheat oven to 350 degrees. Line standard 12-cup muffin tin (or two 6-cup muffin tins) with paper liners. In a large mixing bowl, combine flour, sugar, baking powder, baking soda, and salt; set aside.
- With an electric mixer, combine cocoa and 3 tablespoons hot water until a thick paste forms (this process intensifies the chocolate flavor). Add butter, buttermilk, egg, and egg white; beat until combined. Whisk in flour mixture until smooth.
- Scoop (or spoon) batter into prepared tin(s). Bake until a toothpick inserted in the center of a cupcake comes out clean, about 20 minutes. Transfer cupcakes to a wire rack to cool completely.
- Use an offset spatula or butter knife to spread icing over tops (recipe below) Decorate as desired.
- Makes 12 cupcakes
Ingredients for icing
- 1/2 c. unsalted butter, softened
- 1/2 c.4 cream cheese, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
Directions
In a large bowl, beat together the butter and cream cheese with an electric mixer. With the mixer on low speed, add the powdered sugar a cup at a time until smooth and creamy. Beat in the vanilla extract

ReplyDeletemmm i love that show, cupcake wars. im a huge fan of cooking and baking. so, i'm glad you made this blog up! i've been trying to be healthier, but don't want to give up baking. so, one thing i do is use applesauce instead of butter. you cant taste a difference! just remember it'll be more moist, so don't use as much. kinda spread my cookies thin the other day..lol. ooo also, I didn't have buttermilk once, so i read milk with vinegar (like apple cider vinegar) makes the same as buttermilk. makes things easier for me.
