This is a Momma B original and it is just fantastic!! It is so quick and easy.
Ingredients
Serves 4-6
- 2 cups cooked chicken cut in pieces
- 3 – 4 cups blanched broccoli
- 2 cans cream of chicken soup
- ½ cup milk
- ¼ cup mayonnaise
- Squeeze of lemon
- 1 Tbsp cumin
- ½ Tbsp curry
- Salt and pepper to taste
- Cheddar cheese, grated (optional)
- French fried onions (optional)
- Coconut (optional)
Directions
1. Preheat oven to 350°F
2. In a greased baking dish, put the cooked chicken and blanched broccoli at the bottom
3. Mix the following seven ingredients together and pour over the broccoli/chicken
4. Top with cheddar cheese or french fried onions
5. Bake in oven until it bubbles- about 20 min
6. Serve over rice and add a little coconut if desired
